Veda Al Fresco, an all-new Pure Vegetarian Italian & BBQ Restaurant is here to satisfy your cravings!

The restaurant is recently launched at Shouryagarh Resort & Spa, in Udaipur, and we were among the few lucky souls who were invited on their launch night, on 15 December 2017.

The restaurant offers al-fresco seating in one of the gardens in the resort and feels like a rustic Italian Restaurant based on European Theme; it serves only on Weekends (from Friday to Sunday) and evening services only.

The beautifully designed menu is quite extensive and offers a wide choice of Italian cuisine, and some favourite like wood fire pizzas / Open air BBQ & Grills, Exotic Mocktails / Cocktails And many more exciting delicacies.



The most important feature of this restaurant is their approach to bringing the freshest produces to your plate. The Hotel itself grows most of the vegetables and fresh spices used in the dishes and you can see the Herb Garden, right next to your table.

The 'Farm to Fork' trend is catching up high across the globe, and now it's here in our lovely city also.

We were welcomed by the Shouryagarh Management Team and a glass of refreshing welcome drink. A brief introduction was given about the new restaurant and their vision behind it.





Now talking about the food, we were a group of six and served the following dishes as selected by the Head Chef and the Management -

A typical Italian soup, Cremoso Bianco Fagioli di Zuppa.



Zuppa is often considered as the soup whose main ingredients are locally grown vegetables. In this particular soup, fresh spinach was used with a mixed herb and white kidney beans broth.
The taste was pretty good, and the bean broth was something that left that table talking about it for quite some time.

Next, was an Antipasto (a starter dish) from their open-air BBQ grill, Patata e Bomba a Mano. 



Don't get confused by the Italian name, it's some baby potato, and Pineapple (bomba a mano) marinated in yoghurt and tomato based sauce and spiced generously with common Italian herbs and grilled to perfection and served with a chunky sauce.
The open-air grilling helped to develop the little-charred edges and that I savour personally in any grilled dish. 

Next was am Insalata, an Italian style salad and we were served a bowl of one of the most popular versions of it, a Ceaser Salad. 



All the ingredients used were made in-house in their kitchen as well as the fresh dressing. 
I like the proportion of dressings used in it as in most of the places in the city, either I find that they forget to put the dressing or they confused themselves with a soup by pouring an excessive amount of it.
The soup and the salad were served with a thin garlic flavours crisp that was too liked by everyone.

Next on the table was the 'new favourite' of the town, a Wood Fire Pizza.



It was their house speciality, the Shouryagarh Special Fusion Twist Calibardi Pizza. The toppings were spinach, basil, broccoli, cherry tomatoes, artichoke and a layer of feta. Again, everything was made in their kitchen, liked the tangy and buttery base sauce made with fresh tomatoes. The base was thin and baked perfectly.

Then came the star of the evening, freshly made Spaghetti in vegetarian Bolognese sauce.



Let me tell you something, in a city like Udaipur, when you have freshly made pasta on your table; you can immediately feel the difference between the one we normally bought from the market (which many restaurants also do) and the one which is actually made fresh by the chef with acute perfection and patience. 
The sauce was perfect in a word with the right balance of spice and flavoured to suit the local taste buds. The pasta was cooked properly, and the fresh herbs do their magic, just as expected. 
The whole table was elated with pleasure and savoured every bite of it.

On the whole, a lovely dining experience with good Italian food.

We were also served some dishes from their Indian menu, like Roti, Naan, Paneer Masala and Dal. The taste was as always excellent that you find in Shouryagarh's other in-house restaurants, Swayamwar and Mudra.



For the dessert, we were served first a Cheese Cake with Rasmalai flavoured sponge base and then a massive Gulba Jamun stuffed with raisins, nuts, berry coulis and crumbled chocolate called Stuffed Gul Bahar. A must try if you have a sweet tooth. Unfortunately, we missed clicking picture of those.

The evening was excellent with good food and our lovely host, Ms Priyadarshini Goswami (Asst. Manager - Guest Relation) who took care of us along with her team. 

The service was pretty good, and there are around eight tables providing seating for small to large groups with a vast amount of open area to arrange more tables and guests for a nice get-together and hosting a party.



My sincere wishes to the restaurant team and the Shourygarh management for a great success and we hope that Veda al-fresco will become the must-go place to try good pure vegetarian Italian food in the city.
